Spinach Pasta Casserole


2  10oz packages of frozen, chopped spinach
2 eggs
1 cup sour cream (I use reduced fat)
¾ cup milk
½ cup freshly grated Parmesan cheese
 1 chopped onion, sautéed until tender (about 10 minutes)
4 cups mozzarella cheese – shredded
12 oz cooked pasta (Penne, Rigate or Mostaccioli)
Salt & pepper

Directions:

Preheat oven to 350

Cook spinach in microwave, drain well.  Meanwhile, sauté chopped onion in olive oil until tender.  In a large bowl, mix eggs, sour cream, milk, onion & parmesan cheese.  Add spinach and mozzarella.  Add pasta and stir until spinach and pasta evenly distributed.

Turn into a greased casserole or 9 x 11 pan. Sprinkle with more parmesan.

Bake covered 15 minutes & uncovered an additional 15 minutes.
